ABOUT LEMON CHEESE CAKE RECIPE

Its a no bake cheese cake thats flavoured with lemon juice & most amazing part of this cheese cake is that its a cheese cake without cream cheese in it.

Ingredients Serving: 8

  1. Eggs - 2
  2. Powdered Sugar – 70 gms
  3. Gelatin – 15 gms
  4. Whipped cream – 225 gms
  5. Lemon juice – 1-2 tbsp
  6. Yellow food color – 2-3 drops
  7. Lemon essence – 5- 6 drops
  8. Hung curd - 1/2 cup
  9. Crushed marie biscuits - 7- 8
  10. Butter - 1 tbsp
  11. Recipe for the lemon sauce :
  12. lemon juice (4tbsp) ,
  13. grain sugar (25- 45 gms),
  14. water (16 tbsp),
  15. corn flour mix (1 tsp + 2tbsp water),
  16. lemon essence(4-5 drops) ,
  17. yellow colour (2 – 4 drops).

Instructions

  1. Mix biscuit crumb and butter and spread this mix at the base of the cheese cake ring or detachable cake tin.
  2. Refrigrate this for 15 minutes.
  3. Beat eggs and sugar till soft peaks in a big bowl.
  4. Fold melted gelatin in it.
  5. Mix beaten hung curd , whipped cream , essence, colour & lemon juice to it.
  6. Pour this mix over the refrigrated biscuit crumb base & let it set in refrigerator for 4 – 5 hrs.
  7. After its set , pour the lemon sauce over it & garnish with lemon slices & cherries
  8. Method of making the lemon sauce : Heat lemon juice , sugar & water till boils, add corn flour mix . remove from gas & add colour & essence. Use when cooled.
