Broccoli Cheese Corn soup is a creamy and cheesy soup with an exotic appearance and texture. It is a delicious appetizer something different from a regular corn soup.

Ingredients Serving: 2

  1. 1/2 cup broccoli florets, very finely chopped
  2. 1 cup finely chopped spring onion whites
  3. Black pepper or white pepper powder to taste
  4. 2 tbsp cheddar cheese grated
  5. 2 garlic cloves crushed
  6. 2 cups, corn broth- for that -boil and grind corn and seive , the liquid part is corn broth
  7. 2 tsp butter
  8. 1/2 cup Milk
  9. 1 tsp corn starch
  10. salt to taste ( very little as cheese and butter are also salted)
  11. FOR GARNISH
  12. 1 tsp sour cream or coconut cream

Instructions

  1. Heat a wok and melt butter.
  2. Cook onion and garlic until softened and translucent.
  3. Stir in broccoli florets, salt, pepper and corn broth.
  4. Simmer for about 5 minutes, until broccoli is tender.
  5. Now switch off the flame and allow it to cool for a while.
  6. Churn the prepared broccoli mixture in a blender until smooth and pour in a deep pan.
  7. Heat the strained soup again and stir in cheddar cheese until melted.
  8. Now add the milk and mix.
  9. Mix cornstarch with water in a small bowl to make a slurry.
  10. Stir the corn starch slurry into soup stirring frequently, until thick.
  11. Serve hot garnished with sour cream or butter.
