Pumpkin Skewers with a mayo- mustard sauce is an easy skewers recipe that you can try at home. People who do not like to eat pumpkin will definitely love this dish. This recipe calls for very less oil so pumpkin skewers is a perfect party appetizer for weight watchers. Mayo-mustard sauce gives a tangy taste to the sweet pumpkins. If someone wants to avoid mayo-mustard sauce they can also try it with barbecue sauce.

Ingredients Serving: 2

  1. Pumpkin - 300 gms, cut into 2 to 3 cm blocks
  2. Yellow Bellpepper - 1 small, cut into square shape
  3. Shallots - 8 to 10
  4. Salt to taste
  5. Oregano - 1 teaspoon
  6. Black pepper powder - 1/2 teaspoon
  7. Refined oil - 1 tablespoon
  8. Mayonnaise - 2 tablespoon
  9. Mustard sauce - 1 tablespoon

Instructions

  1. Peel the pumpkin and cut into blocks.
  2. Now boil the pumpkin blocks for 7 to 8 mins. Drain the water and allow the pumpkins to cool.
  3. Take the pumpkin blocks, yellow bell peppers and shallots in a big bowl.
  4. Add salt, black pepper and oregano into the bowl and give a good toss.
  5. Take a skewer and add pumpkin , yellow bell pepper and shallots one after another and repeat the same for all the skewers.
  6. Take a grilling pan add oil and grill the skewers for 8 to 10 mins or until the grilling effects come on the vegetables.
  7. Mean while, take mayonnaise and mustard sauce in a bowl and mix well.
  8. Now serve the hot pumpkin skewers along with mayo-mustard sauce
