ABOUT Vegetable Thukpa ~ A Delicious Vegetarian Noodle Soup RECIPE

Thukpa is a famous noodle soup recipe from the north-east region of India that was shared in our group.

Ingredients Serving: 5

  1. 2 tbsp butter
  2. 2 tsp ginger grated
  3. 4 medium onions chopped fine
  4. 6-7 cloves garlic + 6 cloves
  5. 1/2 tsp chilli powder (adjust as per taste)
  6. A pinch of turmeric
  7. 2 large potatoes
  8. 1/4 cup carrots julienned + 1 carrot
  9. 1/4 cup peas (optional)
  10. 4-5 peppercorns
  11. 1 packet Hakka noodles (I used Ching ’s)
  12. 6 cups water
  13. Salt to taste

Instructions

  1. First make the vegetable stock with the cauliflower middle stalk, the cabbage leaves, carrots, onion, potatoes, garlic and the peppercorn.
  2. Pressure cook this with 6 cups of water in a cooker. Say about 3 whistles.
  3. Let the pressure drop naturally mash up the vegetables then strain the liquid. This liquid is the stock.
  4. Heat butter, add ginger, onions and garlic sauté for a few minutes. Add the vegetable stock. Bring to a boil. Add noodles.
  5. Cook till the noodles soften. Add some spinach (if using) and the cabbage, carrots and peas. Switch off the gas.

Looks nice :D I guess we can also add any vegetables of our choice
