ABOUT Suji ki kachori RECIPE

This is a delicious and quick snack, soft inside and crispy outside. Tastes yummy with tea.

Ingredients Serving: 6

  1. Suji - 1/2 cup
  2. Water - 1 cup
  3. Boiled potatoes 2-3
  4. Green chilli - 1
  5. Red chilli powder - 1 tsp
  6. Ajwain or carom seeds - 1/2 tsp
  7. Chat masala - 1/2 tsp
  8. Jeera - 1/4 tsp
  9. Oil to fry + Oil 1 tsp
  10. Coriander finely chopped
  11. Salt to taste

Instructions

  1. For the potato filling: Take the boiled potatoes and mash them well.
  2. Heat 1 tsp oil in a pan, add jeera and let it splutter. Now add green chillies, potatoes, add the chilli powder, chat masala and coriander.
  3. Remove this mixture in a plate and let it cool.
  4. For the outer suji covering: Take a pan and add water, immediately add suji and keep stirring so that no lumps are formed. Now add salt, oil, ajwain and stir well to make a dough.
  5. Once you have the suji coming together like a dough remove it in a plate. While its still slightly warm, make a flat round with this suji dough, fill in a lemon sized portion of the potato mix and cover well with the suji.
  6. In a similar way do it with the rest of suji and potato mix. You will get 6 kachoris
  7. Now deep fry these on medium flame till golden brown. Serve with mint chutney or ketchup.
