ABOUT Thai Red Curry ( Vegetarian) RECIPE

It is again one of those quick recipes which are loved by all. The list of ingredients is a little long but the taste of the curry with Thai garlic rice or steamed rice steals it all.

Ingredients Serving: 4

  1. For the curry paste:
  2. 2 tbsp of cumin seeds
  3. 2 tbsp of coriander seeds
  4. 4 big red chillies
  5. 1 tbsp of paprika
  6. 3 lemongrass stalks chopped
  7. Fresh galangal or ginger finely chopped
  8. 5 to 6 fresh kaffir lime leaves
  9. 2 shallots chopped
  10. 5 to 6 cloves of Garlic
  11. A handful bunch of fresh coriander
  12. 2 tbsp of sunflower oil
  13. 2 tbsp of fish sauce( optional)in this recipe fish sauce has not been used
  14. For curry:
  15. Coconut milk
  16. Red curry paste
  17. 7 to 8 florets of cauliflower
  18. 5 baby corns cut into halves
  19. 1 Bell pepper
  20. 1 carrot
  21. 7 to 8 small sized medium mushroom
  22. 1 small broccoli

Instructions

  1. Grind cumin seeds, coriander seeds, garlic cloves, shallots, galangal, coriander leaves, kaffir lime leaves, lemongrass stalk, Red chillies with paprika and sunflower oil. To form a smooth paste
  2. In a pan heat coconut milk bring it to boil then add the red curry paste and mix it properly. Let it shimmer. Add salt, Add cauliflower, add baby corn, carrot cut into wedges let these cook. Then add rest of the vegetables let it simmer for another 5 minutes.
