Bread Roll Curry

Ingredients Serving: 4

  1. For bread rolls
  2. Bread 4 slices
  3. Potato 2 medium sized boiled, peeled and mashed
  4. Onion 1 finely chopped
  5. Fennel seeds 1 teaspoon
  6. Cumin seeds 1/2 teaspoon
  7. Mustard seeds few
  8. Red chilly powder 1/4 teaspoon
  9. Turmeric powder 1/4 teaspoon
  10. Coriander powder 1 teaspoon
  11. Kitchen king masala/garam masala 1/2 teaspoon
  12. Oil 1 teaspoon + to grease Appe pan
  13. Salt to taste
  14. For gravy:
  15. Onion 3 big cut into pieces
  16. Tomato 3 blanched, peeled and pureed
  17. Muskmelon seeds 1 teaspoon
  18. Kashmiri red chilly powder 1 & 1/2 teaspoon
  19. Turmeric powder 1/2 teaspoon
  20. Coriander powder 2 teaspoons
  21. Garlic 8 cloves
  22. Ginger grated 1/2 teaspoon
  23. Cloves 5
  24. Black pepper 5
  25. Cinnamon 1-inch stick
  26. Curd 2 tablespoon
  27. Cream 1 tablespoon
  28. Salt to taste
  29. Oil 1 teaspoon + 3 tablespoons

Instructions

  1. For bread rolls:
  2. Heat oil in a pan, add in mustard seeds, cumin seeds and fennel seeds.
  3. Add chopped onion and stir.
  4. Add red chilly powder, turmeric powder, coriander powder and salt.
  5. Stir and add mashed potatoes
  6. Mix well to combine. Remove from heat and cool to handle.
  7. Divide into 4 equal parts and roll to form balls
  8. Take a slice of bread and dampen it with water, squeeze the water from the bread and place the filling (ball) in the centre of the bread.
  9. Close the edges and roll the bread
  10. Make all 4 bread rolls. Heat Appe pan drop 1/2 teaspoon oil in 4 moulds and place bread rolls. Roast on low heat.
  11. Turn them after 5 minutes and again roast till crisp and golden in colour.
  12. Meanwhile In a pan heat 1 teaspoon oil, add garlic cloves, ginger, onion, cloves, cinnamon, black pepper, muskmelon seeds and salt one by one and roast for 5-6 minutes
  13. Now make a fine paste of this mixture
  14. Heat 3 tablespoon oil in a pan add this fine paste and cook for a couple of minutes.
  15. Add tomato puree, red chilly powder, turmeric powder, coriander powder, salt.. cook till oil separates.
  16. Add curd and again cook for 2-3 minutes.
  17. Add water (as enough for consistency of gravy.)
  18. When gravy starts boiling remove the pan from heat and add cream.
  19. At the time of serving add bread rolls.
  20. Enjoy with roti/rice
