ABOUT Soya Tofu Enchiladas with Peri Peri Flavors - A Mexican Treat RECIPE

Enchiladas – A unique Mexican dish prepared using lots of varied stuffing, sauces and cheese.

Ingredients Serving: 4

  1. Tortilla wraps – 4
  2. 1 cup Soya Mini Chunks – Crumbled
  3. 1 cup finely chopped Tofu – Crumbled
  4. 1 cup sliced mushrooms
  5. 1 medium sized onions – finely chopped
  6. 4 garlic cloves – finely chopped
  7. 1/2 inch ginger – finely chopped
  8. Thinly sliced Green and Purple Lettuce leaves
  9. 3 Dollop Peri Peri Flavored Sour Cream
  10. 1 tbsp olive oil
  11. Black pepper
  12. Red chilli flakes
  13. Oregano
  14. For Tomato Basil Sauce
  15. 3 Medium sized tomatoes
  16. 2 Carrots
  17. 4 garlic cloves
  18. 1/2 inch ginger
  19. 1 onion – finely chopped
  20. Basil leaves – finely chopped
  21. 1/2 tbsp – Butter
  22. 1 tbsp Apple cider vinegar
  23. 2 tbsp tomato ketchup
  24. Salt
  25. 1 tsp sugar
  26. 1 tsp black pepper
  27. For serving:
  28. Fresh lettuce leaves
  29. Cherry tomatoes
  30. Parsley leaves
  31. Peri Peri Sour Cream
  32. Mozarrella cheese

Instructions

  1. For sauce:
  2. Boil tomatoes and carrots in water for 7-10 mins. Peel the skin and blend them well. Fry garlic and onion in butter. Add the pureed mixture of tomatoes and carrot. Add sugar, salt and black pepper powder.
  3. Fry well and let it simmer for another 5 mins. Add basil leaves and add 2 tbsp of tomato ketchup. Add apple cider vinegar and mix well.
  4. Your tomato basil sauce is ready!
  5. For stuffing:
  6. Heat olive oil and fry ginger – garlic and onions. Put crumbled soy chunks and tofu and mix really well. Fry it for 2 mins. Add sliced mushrooms and spices. Fry well.
  7. You may want to add peas, capsicums or any other vegetable of your choice. Soya stuffing is ready. Put 2 tbsp of tomato basil sauce into it and mix well. Keep it aside.
  8. For Tortillas:
  9. Take the tortillas and spread a layer of stuffing on the same in the center. Put a huge dollop of Peri Peri Sour cream and spread it along. Sprinkle sliced lettuce leaves and parsley.

  11. Assemble Take a Borosil pan. Spread a layer of tomato-basil sauce on the base.
  12. Put the tortilla wraps upon it and spread some more sauce over it. Sprinkle grated Mozzarella cheese over it
  13. Sprinkle oregano. Bake it at 150 degrees for 20 mins.
  14. A healthy bake of Soya Tofu Enchiladas in Peri Peri flavours is ready. Serve it with lettuce leaves, cherry tomatoes, basil leaves and Sour Cream.
