ABOUT Rich Chocolate Walnut Tarts With Caramel RECIPE

This is my recipe of super cool rich chocolate walnut tarts with caramel.

Ingredients Serving: 5

  1. To make the crust:
  2. 120 gm butter
  3. 200 gm flour
  4. 2 tbsp ground walnuts
  5. 1 egg
  6. 2 tbsp sugar
  7. 1/8 tsp salt
  8. Caramel Filling:
  9. 6 tbsp sugar for caramel
  10. 120 gm toasted walnuts cut into small chunks
  11. 120 gm butter
  12. 3 egg yolks mixed with 5 tbsp sugar
  13. For the chocolate glaze:
  14. 50 gm dark chocolate
  15. 1 tsp butter
  16. 1 tbsp heavy cream

Instructions

  1. To make the crust, mix flour with salt, sugar and ground walnuts. Incorporate butter into the flour, using your hands or using a pastry processor, until the crumbs are formed.
  2. Add the egg and incorporate until the dough is homogeneous. Knead the dough and form a ball from it. Wrap it with plastic and refrigerate for at least 30 minutes.
  3. Preheat the oven to 180 degree celsius. Roll out the dough into a rectangular shape and cut in small circles to fit the mini tart moulds. Press the dough into tart moulds without stretching it.
  4. Punch the bottoms with a fork. Bake these mini tart shells for 20-25 minutes until they turn light golden in colour. Meanwhile prepare the caramel filling.
  5. Mix the egg yolks with sugar until thick, creamy and pale yellow colored. In a medium sauce pan heat the sugar until it turns golden brown in colour. Immediately add walnuts and butter and mix well.
  6. After the butter has melted remove it from the heat and incorporate the egg yolks mixture. Return to heat, stir continuously and simmer until it is thick.
  7. Remove it from the heat, continue stirring for a few minutes then fill the mini tart shells. To prepare the chocolate glaze, melt the chocolate over a bain-marie until smooth.
  8. Next stir in butter and 1 tbsp heavy cream until well blended. Immediately, pour over the caramel filling on top. Enjoy
  9. Serve instantly to enjoy!
