ABOUT Raspberry Couli ! RECIPE

Raspberry coulis is a dessert sauce that goes well on puddings, cheesecakes, cake, pancakes, and ice cream. It adds a refreshing tang, and it brightens up the presentation of a dish.

Ingredients Serving: 6

  1. 450 gm fresh Raspberries
  2. 3/4 cup Sugar
  3. 2 tbsp Lemon juice

Instructions

  1. Wash the raspberries using a colander under cool water and then shake off any excess water.
  2. Place the raspberries, 3/4 cup of sugar, and a tablespoon of lemon juice in the pan. Turn on the heat to medium.
  3. Let the mixture simmer for about 15 minutes. The sugar will dissolve and the berries will breakdown by this time.
  4. Taste the coulis, and add additional sugar if needed. Cook it until it dissolves.
  5. Place a strainer over a bowl, and pour the coulis into the strainer. Push the pulp and seeds around to drain the sauce into the bowl below.
  6. Place the coulis in an airtight container. Store the container in the fridge.
