Powdered Coated Baby Potatoes

Potatoes with a twist. Home made south Indian masala has garbed the potatoes with an aromatic layer.

Ingredients Serving: 2

  1. 150 gms baby potatoes
  2. For making South Indian powder:
  3. 1 tbsp chana dal
  4. 1 tbsp Toor dal
  5. 1 tbsp urad dal
  6. 1 tsp Mustard Seeds
  7. 1 tsp asafoetida
  8. 1 tbsp coriander seeds
  9. 4 to 5 dry red chilly
  10. 4 to 5 curry leaves
  11. salt as per taste
  12. 1 tsp Mustard Seeds
  13. 1 tsp Cumin seeds
  14. 2 tbsp Oil

Instructions

  1. First, boil potatoes and keep it aside.
  2. Once it is cooled, peel the skin and chop into halves.
  3. Take a pan. Switch on the flame to medium heat and dry roast all the ingredients by roasting uniformly till it releases flavor.
  4. Let it cool completely.
  5. Once cooled blend it into a coarse powder in a mixie jar. Remember it shouldn't be a fine powder but a coarse mixture.
  6. Sieve it in a plate to remove the residues.
  7. Now take a pan. Add oil and let it heat on a medium flame.
  8. Add mustard seeds, cumin seeds, asafoetida. Let it splutter and then add curry leaves to it.
  9. Now add boiled potatoes and prepared south Indian masala and salt.
  10. Give it a gentle mix so that the potatoes are coated properly.
  11. Let it cook for some time so that the flavors blend well.
  12. Switch off the flame and take it into a serving plate.
  13. Enjoy the delicacy with plain roti or paratha.
