ABOUT Badshahi Chicken RECIPE

This is a simple chicken recipe with a rich gravy, but this dish is not too spicy. If you like less spicy but rich chicken gravy dish, then this will be your dish. It tastes quite sweet, quite sour of curd & quite spiciness of green chili. It contains lots of aromatic flavors. You can enjoy this dish with any kind of naan, kulcha, paratha but it tastes sound with tandoori roti.

Ingredients Serving: 5

  1. Chicken- 700 gm (cut into big pieces)
  2. Onion- 2 (cut into thin slices)
  3. Onion paste- 3 medium size
  4. Ginger paste- 1 &1\2 tbsp
  5. Garlic paste- 1 & half tbsp
  6. Curd- 150 gm
  7. Cashew nut - 25 gm (paste)
  8. Turmeric Powder- 2tsp
  9. Cumin Powder- 2tsp
  10. Red chili powder- 1tsp
  11. Kashmiri red chili Powder- 1.5 tbsp
  12. Green chili- 4-5
  13. Salt- as per taste
  14. Sugar- 2 tbsp
  15. Special masala(nutmeg half, green cardamom 4-5.black cardamom half, mace half tsp, dry roast all of them then make a smooth powder of it) - 1.5 tbsp
  16. Whole garam masala- 1 tbsp (1 green cardamom, half inch cinnamon stick, 2 cloves)
  17. Oil- 5 tbsp
  18. Ghee- 2 tbsp
  19. Milk- half cup (full-fat)
  20. Rose water- 1 tsp (optional)

Instructions

  1. Wash chicken pieces, & make small gashes, it will help to make it tastier.
  2. Heat up a pan, add 5 tbsp of oil to it, allow it to hot.
  3. Add chicken pieces & salt, fry them for 5-6 min, do not over-fry the pieces, otherwise, the pieces will not tenderize.
  4. Now keep them aside.
  5. Add whole garam masala in that oil, wait for the nice aroma.
  6. Add onion slices to it, fry them till it gets golden brown.
  7. Add ginger, garlic,& onion paste one by one, saute them till the raw aroma diminishes.
  8. Add turmeric, red chili, & cumin powder and saute.
  9. Now make a smooth mixture of curd, cashew nut paste & Kashmiri Mirch.
  10. Add the mixture to the pan & stir till oil gets fully separated.
  11. Now, add the fried chicken pieces, and mix them nicely.
  12. Add silted green chili & the special masala to it.
  13. Keep stirring, then add the milk & salt(very carefully add the salt, remember we already fried the chicken with salt), then cover & cook until the chicken gets fully cooked.
  14. Add water if needed.
  15. After 15 minutes open the lid & check if it is done then add ghee & rose water to it.
  16. Cover & cook for another 5 min
  17. Then serve it.
