There are various kinds of “khichu” made in Gujarat. Generally Khichu is made from rice flour. But today, I used Maize Flour( yellow corn flour) with some seasoning

Ingredients Serving: 4

  1. 2 cup Corn flour/ Maize Flour/ yellow makai atta
  2. 1 tablespoon Oregano
  3. 1 tablespoon chilli flakes
  4. 1/2 teaspoon ginger paste
  5. 1/2 teaspoon green chilli paste
  6. 1/2 teaspoon baking soda
  7. 2 tablespoon oil
  8. 1 teaspoon salt

Instructions

  1. In a sauce pan heat the water. Once the water starts simmering Add green chili and ginger paste, salt, baking soda, oregano, and chilli flakes, let it simmer.
  2. Once the water starts boiling, gradually start adding maize flour.
  3. Mix well the maize flour with water with the help of wooden stick or wooden spatula. sure that their should be no lumps
  4. Stir continuously while the maize flour combines with water and form a nice dough. Let it cook for about a minute.
  5. Khichu dough is ready. Let us steam the dough on a steamer.
  6. Add water into steamer and heat it. Place the khichu dough on top for steaming.
  7. Let the khichu dough steam for 7-8 minutes.
  8. khichu is ready to serve now. Sprinkle grated cheese on this tasty khichu serve hot.
