ABOUT Punjabi Rajma Masala RECIPE

A flavourful spiced kidney beans / rajma recipe - Punjabi style. Few spices and creamy dish - easy to make.

Ingredients Serving: 3

  1. Rajma 1 cup
  2. Onion big chopped 1
  3. Tomato small chopped 2-3
  4. Green chillies 1-2
  5. Ginger garlic paste 1 tbsp
  6. coriander powder 1tsp
  7. Red chilli powder ½ tsp
  8. Garam masala powder ½-¼ tsp
  9. Turmeric powder ½ tsp
  10. Asafoetida / Hing powder ¼ tsp
  11. Kasuri Methi Crushed 1 tsp
  12. Jeera 1tsp
  13. 1-2 tbsp cream
  14. 2 tbsp butter or ( 1 tbsp oil + 1 tbsp butter)
  15. Salt to taste

Instructions

  1. Rinse and soak rajma in enough water overnight or for 8-9 hours
  2. Next day, discard the water and rinse he rajma beans in fresh water.
  3. Pressure cook the beans in 4 cups water for 15-20mins.
  4. Check if rajma is cooked properly, else pressure cook again. Remove from gas and let it cool.
  5. Heat butter + oil in separate pan. Add jeera and let it crackle.
  6. Add onion and saute till golden brown.
  7. Add ginger garlic paste and chillies and saute for 2-3 minutes.
  8. Add tomatoes and saute for 2-3 minutes
  9. Now add all the masalas - red chili powder, turmeric powder, hing and garam masala powder.
  10. Stir and cook till the oil separates.
  11. Next add the rajma first and mix. Later add the water in which rajma was cooked.
  12. Add additional 1-1.5 cups water and let the rajma get cooked alongwith the masalas for 10-15 minutes.
  13. Mash few beans with the back of the spoon to thicken the gravy.
  14. Once the gravy is either to thin or too thick, add Kasturi methi powder and cream.
  15. Simmer for 1 minute and switch off the gas.
  16. Serve hot with Jeera rice or parathas.
