I have made this crunchy khatti meethi beetroot stir fry in southindian style.this is very crunchy because of fried groundnuts coarse powder and coconut makes it more flavourful. This recipe is very beautiful, tasty and full of iron,folic acid ,fibre,calcium,vitamin A, C etc.

Ingredients Serving: 4

  1. Beetroot 2 medium size
  2. Tomatoes 2 finely chopped
  3. Roasted peanuts 4 tablespoon
  4. Grated coconut 4 tablespoon
  5. Gram daal and urad daal 1 tablespoon
  6. Small Mustard 1/2 teaspoon
  7. Curry leaves 10-12 numbers
  8. Lemon juice 3 tablespoon(1 1/2 lemon)
  9. Whole red chilli 3 numbers broken into 2 halves
  10. Green chillies finely chopped 3 numbers
  11. salt as per taste

Instructions

  1. Rinse beetroot with water and take out the skin with peeler or knife.
  2. Grate the beet roots
  3. These are the ingredients shown below in the picture and we need 2 chopped tomatoes also.
  4. Heat oil in a kadai to a smoking point now reduce the flame to medium add in urad daal and chana daal and fry them until slight color changes.
  5. Add in small mustard seeds and allow it to crackle
  6. Now add red chillies and curry leaves and fry for a while.
  7. Add chopped green chillies and fry for a second.
  8. Add in chopped tomatoes .
  9. Add in little salt so that tomatoes becomes soft faster .
  10. cook on medium flame until tomatoes become soft.
  11. Add in grated beetroot,Fry on high flame for 2 minutes.
  12. Cover and cook for another 4-5 minutes until beet root becomes little soft.
  13. Open the lid and Add in grated coconut ( fresh or dry) and cook again on medium flame for another 2 minutes .
  14. Add in lemon juice
  15. Add in coarse powder of fried ground nuts and mix
  16. Adjust the salt as per your taste.
  17. Fry on high flame for a minute by constantly stirring with a cooking spoon and switch off the flame.
  18. Your crunchy, khatti meethi beetroot is ready to serve.
  19. Serve this crunchy and healthy sweet and sour beetroot vegetable with paratha or with sambhar and rice
