ABOUT French Onion Soup RECIPE

A bistro classic soup usually based on meat stock, onions and cheese, which i find most comforting on a chilly or raining day. A hearty soup enjoyed best with thick slices of toasted bread

Ingredients Serving: 4

  1. 1 cup Vegetable Stock
  2. 1 cup Milk
  3. 1/4 cup Cheese
  4. 3 Onions finely chopped
  5. 2 Garlic cloves
  6. 2 tbsp Cornflour
  7. 1 1/2 tbsp Butter
  8. 2 Bay leaves
  9. 1/2 tsp Black Pepper
  10. 1/2 tsp Salt
  11. a few Thyme sprigs
  12. Baguette (serve on the side)

Instructions

  1. Dissolve the cornflour in 1/4 cup milk.
  2. Melt the butter over medium heat in a pan
  3. Add the onions, garlic, bay leaves, a few sprigs of thyme, salt and pepper and cook for 25 mins over low heat until the onions are soft and caramelized.
  4. Add the stock, milk and the corn flour milk to the onion mixture and bring to a boil.
  5. Boil for 10 mins till the soup becomes thicker.
  6. Add salt and pepper to taste,cook for 2 more minutes.
  7. Serve with sliced toasted baguette.
