Honey Glazed Drunk Chicken

ABOUT Honey Glazed Drunk Chicken RECIPE

This is a great American dinner recipe. It compliments a cocktail party or a pool-side lunch beautifully.

Ingredients Serving: 6

  1. 2.5 oz or 2 kg Chicken thigh fillets (Boneless)
  2. 1 US cup or about 240 ml Red Wine
  3. 0.5 US cup or 120 ml raw honey
  4. 1 tbsp balsamic vinegar
  5. 1 tsp fresh ground black pepper
  6. 2 tbsp dark soy sauce
  7. 2 tbsp picked, fresh thyme leaves
  8. Salt to taste
  9. Light olive oil spray for greasing

Instructions

  1. Pre-heat oven to 400F or 200C. Grease a baking dish with olive oil.
  2. Rinse chicken in a colander and drain out all excess water. Place them in the baking dish. Add half the wine and all of honey, salt, pepper, balsamic vinegar, soy sauce and thyme leaves. Mix well to coat the chicken uniformly.
  3. Line and place the chicken thigh fillets in a single layer on the baking dish so they do not overlap.
  4. Place inside oven and bake for about 30 minutes. Take the dish out of oven.
  5. Transfer the dish contents in a wok placed over medium-high heat. Add the remaining red wine. Cook for 10-15 minutes with constant stirring/flipping of chicken, for the sauce reduction or until the sauce is thick and nice. Take off heat.
  6. Serve immediately over warm rice bed with some salad and grilled veggies on the side
