ABOUT Hyderabadi Kaddu aur gosht ka dalcha.... RECIPE

A dal recipe with a difference, dalcha is synonymous to Hyderabad City. This is purely a vegetarians delight if made without mutton. It tastes equally yum. It can be relished with any veg side dish or fried items or even our Indian good old poppadums. In this particular dal recipe, mutton, dal and the bottle gourd are cooked separately and then combined together for that delicious dal called as dalcha here. I have used two different dals in this recipe. One can use even one single dal of their choice. I usually combine two or even more dals for that extra amount of protien content that is so very rich. Ingredients Serving: 6

  1. FOR TENDERIZING DAL....
  2. Bengal gram (chana dal) 1/2 cup
  3. OR
  4. Toor dal (pigeon pea lentils) 1/2 cup
  5. Red lentils (masoor dal) 1/2 cup
  6. Turmeric 1/2 tsp
  7. Ginger garlic paste 1 tsp
  8. FOR PRESSURE COOKING MUTTON......
  9. Mutton bone-in 1/2 kg
  10. oil 2 tbsp
  11. Red chilli powder 2 tbsp
  12. Salt to taste
  13. Ginger garlic paste 1 tbsp
  14. Tomatoes chopped medium 5
  15. FOR COOKING THE BOTTLE GOURD...
  16. Onion large sliced 1
  17. 1" cinnamon sticks 2
  18. Caraway seeds 1 tsp
  19. Garam masala powder 1 tsp
  20. oil 5-6 tbsp
  21. Tamarind 1/4 th cup
  22. Coriander leaves chopped a handful
  23. Curry leaves few
  24. Green chillies slit 2 or 3

Instructions

  1. Boil the dals or pressure cook adding the ingredients listed under tenderizing the dal.
  2. Allow the pressure to settle down.
  3. In the meantime, pressure cook the mutton with all the ingredients listed under it.
  4. In a large cooking pot, add oil and all the other ingredients listed under cooking the bottlegourd.
  5. Saute the onions well until translucent.
  6. Next add in the bottle gourd pieces.
  7. Cover and simmer on low flame for 12 minutes or until done.
  8. Soak the tamarind in enough water and squeeze out the pulp.
  9. Now comes the mixing process.
  10. Combine the dal mix and the mutton with the cooked bottle gourd.
  11. Mix everything well and add the tamarind water.
  12. Add some slit green chillies, few curry leaves and chopped coriander.
  13. Cover and simmer on low flame until the oil starts floating on top.
  14. The consistency can be adjusted by adding some hot water.
  15. Yummy kaddu aur gosht ka dalcha is ready to be served with either plain rice or bagara khana.
