ABOUT Cheesy potato masala bread RECIPE

Bread made of all purpose flour stuffed with layers of cheese and potato masala.

Ingredients Serving: 9

  1. For the dough : (1 cup size = 240 ml)
  2. All-purpose flour - 1 1/2 cup + some more for dusting
  3. salt - 3/4 tsp
  4. active dry yeast - 1/2 tablespoon
  5. water - as needed
  6. milk - 40 ml
  7. unsalted butter (room temperature) - 30 ml (1/8 cup)
  8. For the filling:
  9. shredded cheese - 4 - 6 tsp (I used shredded Parmesan cheese
  10. oil - 2 tsp
  11. onion - 1
  12. cumin seeds - 1 tsp
  13. coriander leaves (chopped) - 1 fist full + few for garnish
  14. potato - 1 (big size)
  15. salt - as needed
  16. red chili powder - 1/2 tsp
  17. sambhar powder - 1 tsp
  18. turmeric powder - 1/4 tsp

Instructions

  1. Dissolve yeast in a little bit of water and rest it for at least 5 minutes until it gets foaming / bubbling up.
  2. Mix 3/4 tsp of salt and flour in a bowl.
  3. Add dissolved yeast water and milk to the flour. Mix well.
  4. Slowly add water and form a dough. The dough has to be sticky.
  5. Cover the dough with a wet cloth and keep it aside for at least 2 hours.
  6. The dough quantity will be doubled after 2 hours.
  7. Add softened butter to the dough and knead it well. Keep it aside.
  8. Pressure cook potato for 3 whistle and mash it well. Fine chop the onion.
  9. Heat oil in a vessel and add cumin seeds.
  10. Once it splutters, add chopped onion.
  11. Once the onion becomes transparent, add salt, turmeric powder, chili powder and sambhar powder. Add less salt than usual as we will be adding cheese which itself will give a salty flavor.
  12. Mix well and then add the mashed potato.
  13. Sprinkle some water and cook it for 5 minutes.
  14. Add chopped coriander leaves and mix well
  15. Place parchment paper in a baking pan and apply some butter
  16. Dust some flour on the rolling pan and dough
  17. Divide the dough to 2 equal sized balls
  18. Flatten 1 dough ball to a big circle and place it on the parchment paper.
  19. Spread the potato masala in the center of the dough circle
  20. Fold the sides and cover the masala so that the masala is completely sealed.
  21. Sprinkle cheese on top of it.
  22. Preheat the oven to 180 degree Celsius or 350 degree Fahrenheit.
  23. Flatter another dough ball to a thick circle and then place it on top of the cheese layer.
  24. Tuck all the extra sides under the first layer.
  25. Sprinkle chopped coriander leaves on top.
  26. Bake it for 30 - 35 minutes. (if you insert a toothpick, it should come out clean)
