ABOUT PYAZ KI SABJI RECIPE

Try out this simple curry made with pearl onions.. Isn't it a great idea for days when we run out of vegetables at home.

Ingredients Serving: 3

  1. Shallots (baby onions) ... 25 - 30
  2. Tomato puree .................. 2 tbsps
  3. Besan / gram flour ......... 1 & 1/2 tsp..
  4. Asafoetida ..................... a pinch
  5. Turmeric powder ......... 1/4 tsp.
  6. Cumin powder .............. 1/2 tsp
  7. Coriander powder ......... 1/2 tsp
  8. Star anise ................. 1
  9. Black cardamom ...... 1
  10. Saunf .............. 1 tsp.
  11. Cumin seeds .... 1/4 tsp.
  12. Methi seeds ..... 1/4 tsp. (fenugreek)
  13. Cloves ............. 3-4
  14. Cinnamon ...... 1 inch piece.
  15. Salt ............... to taste
  16. Oil ................ 2 tbsps

Instructions

  1. . Peel the shallots, sprinkle salt and set aside for 10 minutes.
  2. Heat oil in a pan and deep fry the shallots.(about 4-5 minutes)
  3. Dry roast the besan .
  4. Crush the spices a bit in the mortar and pestle.
  5. In a pan take a little oil and add the asafoetida and crushed dry spices.
  6. When they leave an aroma, add the shallots and saute for a minute. Then add the tomato pulp and the dry masalas.
  7. Mix well and add the roasted besan and stir until blended.
  8. Add a cup of water and simmer for a few minutes. Garnish and serve.
