ABOUT Spring Onion Mix Veg Pakora RECIPE

Pakora or Bhajia or Bhaji prepared with onion or potato or spinach, Chilly is a popular street food. People like to consume it any time any season. It tastes fabulous along with garlic chutney or sauce. In some of the region of Maharashtra people have this as a side dish along with dal rice or with chapati or roti. I have given a little twist in this recipe adding lots of veggies along with onion.

Ingredients Serving: 4

  1. Onion – 1nos large
  2. Cabbage – 1 ½ cup
  3. Green capsicum – ½ cup
  4. Spring onion bulb – 5-6 no’s
  5. Spring onion green – 1cup
  6. Baby corns – 4-5 nos.
  7. Coriander leaves – 1/4th cup (Finely chopped)
  8. Green chili – 1tsp(Finely chopped)
  9. Besan or gram flour – 1 cup
  10. Red chili powder- 1tsp
  11. Carom Seeds – 1tsp
  12. Cumin seeds – ½ tsp
  13. Turmeric – ½ tsp
  14. Garam masala – 1tsp
  15. Asafoetida – 1/4th tsp.
  16. salt as per taste
  17. Oil for frying
  18. Garnish - Lemon wedges, coriander leaves, tomato sauce, Dry Garlic Chutney

Instructions

  1. Wash, finely slice onion, cabbage, spring onion bulbs, green capsicum and baby corns.
  2. Finely chop green of spring onions.
  3. Add salt. Rub the salt and vegetables with hands so that they will release their water. Keep aside for an hour.
  4. Add Turmeric powder, garam masala, carom seeds, cumin seeds, red chili powder, Asafoetida. Mix thoroughly.
  5. Add gram flour slowly. Mix well into vegetables. No need to add water. Vegetables should properly coat with gram flour
  6. Heat oil in a kadai. Take a spoon full of bhaji mixture. Fry pakoras on medium low flame.
  7. Remove on kitchen towel.
  8. Serve hot with dal rice as a side dish or sauce or chutney as a snack.
