ABOUT Alugadda Barada RECIPE

Telangana cuisine has it's unique flavors. I am not so perfect in this cuisine but I know a little bit about this cuisine so I am trying to make a thali with some Telangana recipes. In this thali I have mixed both traditional Telangana and Muslim cuisines. In the traditional Telangana cuisine there are many delicious dishes to explore, this one post is not enough for that so I took few recipes to fill my thali.

Ingredients Serving: 3

  1. Potatoes- 3 big sized, peeled and cut into cubes
  2. Onion- 1 big sized, finely chopped
  3. Green chillies- 2 finely chopped
  4. Red chilli powder- 3/4 tsp
  5. Turmeric- 1/4 tsp
  6. Oil- 1 tbsp
  7. Salt to taste
  8. For the Masala:
  9. Channa dal- 1/2 cup
  10. Moong dal- 1 tsp
  11. Coriander seeds- 1 tsp
  12. Cumin seeds- 1/2 tsp
  13. For Talimpu:
  14. Split urad dal- 1 tsp
  15. Mustard seeds- 1 tsp
  16. Dry red chillies- 2 broken

Instructions

  1. Heat oil in a deep frying pan, add mustard seeds and let them pop, then add in urad dal and broken red chilies. Fry till the dal turns into a brown colour.
  2. Now add the chopped onion and green chilies, fry till the onion turns into a pink colour. Add the turmeric powder and give it a good stir.
  3. Next, add in potato cubes with salt to taste and mix well. Cover and cook in a very low flame for 10 minutes.
  4. In the mean while, dry roast the masala ingredients into a light brown color. Let them cool, then make a fine powder in a blender.
  5. Check the potatoes if they are cooked, then add red chilli powder, masala powder and sprinkle a little water so that the powders coat well on the potatoes. Mix well and cook for 2 minutes.
  6. Remove from the heat and serve with rice, pappucharu and ghee.
