Ingredients Serving: 3

  1. Spinach 4 bunches , washed and chopped
  2. Potato 1 , cut in cubes
  3. Onion 1
  4. Garlic pods finely chopped 3
  5. Tomato chopped 1
  6. Ginger paste 1/3 tsp
  7. Turmeric powder 1/3 tsp
  8. Cumin Powder 1/2 Tsp
  9. Coriander powder 1/2 tsp
  10. Red dry chilli 1
  11. Green chilli 2
  12. Whole cumin seeds 1/2 tsp
  13. Salt as required
  14. Oil as required

Instructions

  1. Heat oil in a nonstick pan
  2. Now shallow fry potatoes until red
  3. Keep them aside
  4. Now in the same pan add whole cumin seeds when spluttered add chopped onion , garlic and ginger paste
  5. Saute until light brown
  6. Add turmeric powder , cumin powder , chilli powder and salt
  7. Add chopped tomatoes , cover and cook until tomatoes are soft
  8. Now add spinach , cover and cook for 5 mins
  9. Add fried potatoes , saute until all water dries up
  10. Serve hot with rice or roti
