ABOUT Kerala Style Egg Roast RECIPE

Egg roast is a staple side dish of Kerala usually served along with appam and idiyappam. Sliced onions are sauteed until soft and golden brown, and then mixed with tomatoes, green chilies, ginger and curry leaves. The blend of spices makes this dish an everyday favorite.

Ingredients Serving: 4

  1. Boiled eggs 4
  2. Onions (sliced) 4
  3. Green chilies (cut lengthwise) 2
  4. Tomato (chopped) 2
  5. Ginger (chopped) 1 inch piece
  6. Curry leaves 2 sprigs
  7. Turmeric powder 1/4 tsp
  8. Red Chili Powder 1 Tsp
  9. Coriander powder 1/2 tsp
  10. Crushed fennel 1/2 tsp
  11. Coconut oil 3 tbsp

Instructions

  1. Heat oil in a pan.
  2. Add the sliced onions and saute until they turn soft and light brown in color.
  3. Next add the chopped ginger, green chilies and curry leaves. Saute for a minute.
  4. Then simmer the flame.
  5. Add turmeric powder, red chili powder and coriander powder. Mix well.
  6. Next add the chopped tomatoes and saute until they turn soft and mushy.
  7. Add the crushed fennel too and mix well.
  8. Make slits on each of the boiled eggs.
  9. Now add the boiled eggs and coat them with the onion masala.
  10. Cook on low flame with lid on, for 1-2 minutes for the flavors to infuse.
