These flaky and crisp kachoris with a soft onion filling inside are very famous in Rajasthan and Madhya pradesh.

Ingredients Serving: 4

  1. For the coating:-
  2. Wheat flour-1/2 cup
  3. Maida-1/2 cup
  4. Ghee-1/4 cup
  5. Salt-1 tsp
  6. Carom seeds-1 sp
  7. For the filling:-
  8. Onions-4
  9. Green Chillies-2
  10. Ginger-1 inch
  11. cumin Seeds-1 tsp
  12. Fennel seeds-1 tsp
  13. Asafoetida-1 pinch
  14. salt
  15. Turmeric-1/2 tsp
  16. chilli powder-1 tsp
  17. coriander powder-2 tsp
  18. cumin Powder-1 tsp
  19. Aamchoor-1 tsp
  20. Garam masala-1 tsp
  21. Gram flour-1 tbsp
  22. Coriander-2 tbsp
  23. oil for frying
  24. For serving:-
  25. green chutney
  26. Sweet tamarind and dates chutney


  1. Take ingredients for the outer covering in a bowl and knead a semisoft dough.
  2. Now take a pan and heat a tbsp of oil .Add cumin seeds,fennel seeds and asafoetida.
  3. When these splutter,add ginger and green chilli paste.Saute for 30 seconds.
  4. Now add finely chopped onions.
  5. Cook for 3 to 4 minutes till they brown slightly.
  6. Now add all dry spices written in filling part.
  7. Mix properly and then add besan and chopped coriander leaves.
  8. Mix and cook for 2 minutes.The besan will absorb moisture and make the filling thick.Now our filling is ready.
  9. Now take a small ball from the dough and roll into small Puri.Put a tbsp of filling on this.
  10. Now pick up from sides and take pleats.Seal the dough.
  11. Press lightly with fingers to form a flat kachori.
  12. Prepare all kachoris simlarly.
  13. Now take a pan with oil for frying.When oil becomes hot slowly slide the kachori into the oil and fry at medium to slow flame .
  14. Fry all kachoris similarly and serve with sweet chutney and green chutney.
