Sometimes we have lots of leftovers at home left in small amounts. We can transform them into yummy pav bhaji.

Ingredients Serving: 4

  1. 1 katori aloo gobi
  2. 1 katori aloo matar
  3. 1/2 katori baingan bhartha
  4. 1 chopped onion
  5. 1/2 tsp Cumin
  6. 2 lemons
  7. 1 spoon butter
  8. Salt and red chilli powder
  9. Orange food colour

Instructions

  1. Grind all the leftovers with some water in a grinder.
  2. Heat some oil in a pan and add 1/2 tsp cumin seeds.
  3. Add chopped onion and saute.
  4. Add salt and pepper as per your taste.
  5. Add blend of leftovers to the pan and saute for 2-3 minutes.
  6. Add some food colour and mix well.
  7. Add juice of 2 lemons.
  8. Garnish with chopped fresh coriander and butter.
  9. Serve hot with toasted pav.
