Nolen Gurer Sandesh (date palm jaggery sweet)

Melt-in-mouth Bengali sweet made of curdled milk. it's very soft and delicious

Ingredients Serving: 10

  1. 2 litre full cream milk
  2. Lime juice , 3-4 tbsp
  3. Date palm Jaggery, 8-10 tbsp
  4. Sugar, 1-2 tbsp (optional, depending on your sweetness quotient)
  5. Raisins and pista for garnishing

Instructions

  1. Boil milk in a pan, stirring occasionally. As the milk boils, gradually add lime juice and stir. The milk will curdle
  2. Take a piece of muslin cloth and strain the curdled milk
  3. Make a potli with the cloth and wash the chenna/paneer with cold water to remove the lime flavour
  4. Put the cloth in a strainer to let all the extra water out and let it stand for 20 minutes. We don't want the chenna/paneer to be dry, it should be moist or the sandesh will not be soft
  5. Now take the chenna/paneer and knead till all lumps are removed. The dough will be a bit sticky because of the water but this will help in making soft sandesh
  6. Take a non stick pan and add 2 tbsp of water in it
  7. Add pieces of jaggery and let it melt over low heat
  8. Add the kneaded paneer to the melted jaggery and mix well
  9. Check the taste. If required, add more jaggery or sugar
  10. Cook for 5-6 minutes. You will see the chenna/paneer coming together and will start to release from the pan
  11. Take some mixture in between you fingers, it shouldn't stick
  12. Switch off the gas and stir the mixture for another 4-5 minutes and then transfer the mixture on to a plate
  13. Wet your hands with water and make round shapes
  14. Garnish with raisins and pista!
