ABOUT Mutton In Brown Onion Gravy With Brown Onion Pulao RECIPE

This is a Sindhi dish which is cooked in a gravy made of deep brown onions. Its called "Raddhala Teevan" or "Daag Waro Teevan" in Sindhi.

Ingredients Serving: 5

  1. For Mutton:
  2. Mutton - 1 kg
  3. Onions - 5 Large Thinly Sliced
  4. Tomatoes - 3 Small or 2 Large (Chopped)
  5. Ginger garlic paste - 2 tsp
  6. Turmeric powder - 1 tbsp
  7. Coriander Powder - 2 tbsp
  8. Red Chilli Powder - 2 Tsp
  9. Garam Masala powder - 2 tsp
  10. Salt to taste
  11. Coriander leaves for garnish
  12. Oil - 3 to 4 Tbsp
  13. For Pulao:
  14. Basmati rice - 3 cups
  15. Onions - 2 Large Thinly Sliced
  16. Coriander powder - 2 tsp
  17. Red chilli powder - 1 tbsp
  18. Garam Masala Powder - 1 tbsp
  19. Tej patta - 2
  20. Green chillies - 4 Slit
  21. Salt to taste
  22. Coriander leaves - for garnish
  23. Water - 6 cups
  24. Oil - 3 to 4 Tbsp

Instructions

  1. MUTTON GRAVY:
  2. Clean and wash the mutton pieces.
  3. Heat oil in a pressure cooker. Add the onions and fry them till they turn into a very dark brown color.
  4. Add the tomatoes and about a cup of water. Pressure cook the onions and tomatoes till 3 whistles.
  5. To the onions, add the mutton, ginger garlic paste, turmeric powder, coriander powder and salt.
  6. Mix well and keep cooking on high flame. Keep adding little water and continue to saute till it turns a dark brown color.
  7. Once it turns dark brown, add enough water for gravy and lastly, garam masala powder. Cover and cook on low flame till mutton becomes tender.
  8. Finally, garnish with coriander leaves.
  9. PULAO:
  10. Soak Basmati Rice for 15 minutes.
  11. Heat oil. Add the onions and fry them till dark brown colour.
  12. Add 6 cups of water. Add salt, coriander powder, red chilli powder, garam masala powder, green chillies, coriander leaves and tej patta.
  13. Once it boils add the rice. Cook the rice till done.
  14. Garnish with fried onions.
