This is one of the best tiffin recipes, delicious crispy parathas made with eggs and onion filling.

Ingredients Serving: 3

  1. Boiled eggs 4 chopped
  2. onion 1 big
  3. Kasuri methi 2 tbsp
  4. Mint leaves hand full
  5. Coriander leaves handful
  6. Dry masalas
  7. Red chilli pwdr
  8. Haldi pwdr
  9. Dhania pwdr
  10. Zeera pwdr
  11. Garam masala pwdr
  12. Salt
  13. All dry masalas acc to your taste
  14. Regular aata dough to make 8 chapaties

Instructions

  1. Boil 4 eggs and remove the skin and chop them, not very fine though
  2. Heat a pan with some oil and add the sliced onions.
  3. When the onions turn pink, add kasuri methi and fry
  4. Now add dry masala powders and salt
  5. Add mint and saute.
  6. Add the chopped eggs and mix gently
  7. Add chopped coriander leaves when the mixture is cooled a bit.
  8. The mixture is ready to be stuffed.
  9. Knead a soft regular dough with aata , salt and water.
  10. Make 2 chapattis
  11. On 1 chappati, place the egg & onion mixture, spread it nicely.
  12. Seal with another roti. This way mixture is evenly spread on the paratha.
  13. Fry the paratha on hot griddle, on both the sides applying little ghee on both the sides.
