Ingredients Serving: 3

  1. Maida 2 cups
  2. Baking powder 1 tbsp
  3. Baking soda 1/4 tsp
  4. salt 1/4 tsp
  5. Unsalted butter 100 gm
  6. Cheese 100 gm
  7. Spring onion, green part, 1/2 cup
  8. Buttermilk 1 cup

Instructions

  1. Take maida, baking powder and soda and salt in a food processor bowl.
  2. Take very cold unsalted butter and chop it into little square pieces. Add to the bowl
  3. Pulse food processor so that the butter and flour look like coarse sand
  4. Take it in a bowl and add grated cheese and chopped green part of spring onions
  5. Make a well in the middle and add buttermilk
  6. Mix with hands just till it is incorporated. Dough should be very wet and sticky. Do not knead too much. If dry add more buttermilk
  7. Remove it on a flour dusted surface and flatten it with dusted hands to a rough rectangle
  8. Fold it like an envelope in 3 parts and turn it by 90 degrees
  9. Repeat process thrice
  10. Keep dusting whenever required
  11. Flatten it to a rectangle again (1/2 inch thickness) with hands only
  12. Take a cookie cutter and cut it straight down without twisting the cutter
  13. Place on a greased tray with 1 inch distance
  14. Place in the freezer till you preheat oven at 230 degrees
  15. Brush with butter and bake for 15-17 mins till Brown on top and bottom
  16. Serve hot with gravy, butter or salsa
