Its a cake which I have baked it without using baking powder or baking soda.Usually gilatin is used in cheese cake.As this paneer cake is baked,so there is no need of gilatin also.Here I have used some fresh fruits which make it delicious and nutritious also.So it is a very healthy and tasty delicious dessert.

Ingredients Serving: 8

  1. For Paneer
  2. Cow Milk 1.5 litre
  3. Curd 3/4 cup
  4. Other ingredients for filling
  5. Condensed milk 1/2 cup
  6. Cream cheese 50 gram
  7. Ripe Mango pulpe 3/4 cup
  8. Strawberry crushed 2 tablespoon
  9. butter 2 tablespoon
  10. Cornflour 4 tablespoon
  11. Milk 4 tablespoon
  12. Sugar to taste
  13. for base
  14. Digestive biscuit 10 pieces
  15. Butter 4 tablespoon
  16. FOR GARNISH
  17. Fresh strawberry 3 pieces
  18. Fresh mango 7 slices
  19. Strawberry sauce 2 tablespoon

Instructions

  1. First we have to make paneer.For this take the milk in a heavy bottomed vessel in medium heat.
  2. Beat the curd and keep aside.
  3. When bubbles come into the milk,add the beaten curd into it slowly and stir it.
  4. Within 1-2 minutes you can see it starts curdling.
  5. When milk is completely curdled, switch off the flame and strain it using a muslin cloth.
  6. Drain the excess water from paneer squeezing the cloth.
  7. Hang it on your kitchen basin tap for 30 minutes so that excess water will be drained.
  8. After that put a heavy object on it so that extra water can be completely drained. Keep it for 3 hours as it is.
  9. After that your paneer is ready. Crumbled it using your hand finely.
  10. Take a cake baking tin and set a baking paper in it.
  11. Now you have to make the base.Take all the biscuits into your mixer jar and crush it.
  12. Mix the crushed biscuit with melted butter properly.
  13. Set it in the baking pan to form the base and keep it for 15 min in refrigerator to set.
  14. Take the cornflour and milk a bowl.Mix it properly.
  15. Pour the cornflour mixture into the pan and add butter.Allow it to boil for 3-4 minutes. Stir it continuously so that it doesn't stick to the bottom of the pan.After that switch off the flame and keep it aside.
  16. Take the paneer in a large mixing bowl.Mix all other ingredients which we need for filling properly. Add cornflour mixture into it and Give it a good whisk.
  17. Pour the mixture on the biscuits base in the baking pan and flatten the upper surface of the cake mixture.
  18. Preheat the oven at 180°C.
  19. Bake the cake at 150°C for 80-90 min or until the inserted toothpick at the center comes out clean.
  20. Let it cool before garnishing.
  21. Here I have garnished with strawberry sauce and some fresh strawberry and mango.You can do it as per your choice.
  22. Serve it hot or cold.
