This is a fusion Entremet with components of vanilla, milk almond cake, rooh afza jelly, kheer and dressed with whipped cream mixed with kheer.

Ingredients Serving: 4

  1. For Vanilla almond Milk Cake:
  2. 1 1/2 cup flour
  3. 1/2 cup almond flour
  4. 1/4 cup butter
  5. 1/2 cup caster sugar
  6. 2 teaspoon vanilla essence
  7. 1 teaspoon baking powder
  8. 1/2 teaspoon baking soda
  9. 1 cup milk
  10. 1/2 teaspoon vinegar
  11. For Rooh Afaza Jelly :
  12. 1 1/2 cup water
  13. 3tbsp rooh afaza
  14. 1 tbsp sugar
  15. 1 tbsp agar agar powder
  16. For Kheer :
  17. 2 CUP MILK
  18. 1/2 cup rice
  19. 1/4 cup sugar
  20. 1 teaspoon crushed cardamom powder
  21. 1 tablespoon agar agar powder
  22. For Kheer Whipped cream :
  23. 1/2 cup whipping cream
  24. 4 tablespoon kheer
  25. 1 tablespoon icing sugar
  26. For Garnish :
  27. 4 tablespoon crushed almonds


  1. For Vanilla Almond Milk cake:
  2. Cream butter and caster sugar untill light and fluffy.
  3. Sieve flour, baking powder and baking soda.
  4. Add almond flour to above flour mixture.
  5. Mix this to butter and caster sugar mix then add milk and vanilla essence.
  6. Add vinegar to it and mix lightly.
  7. Pour batter to greased baking tin .
  8. Bake at 180 C in preheated oven for 30 - 40 mins untill done.
  9. For Rooh Afza Jelly:
  10. Mix all the ingredients except agar agar and heat at slow flame .
  11. once mixture starts boiling , add agar agar powder and mix well.
  12. Switch of the flame and pour the mixture in a round greased container to set.
  13. It will take around one hour for jelly to set at room temprature.
  14. For Kheer:
  15. Boil rice and milk in a pan in slow flame.
  16. Stir occasionally and cook untill rice becomes soft and milk becomes thick.
  17. Add sugar and cardamom powder and mix well .
  18. Add agar agar powder and pour in a lined round tin and allow it to set at room temprature.
  19. For whipped cream:
  20. Whip chilled cream till soft peaks.
  21. Add icing sugar and whip till still keeps.
  22. Add finely mashed kheer to whipped cream and mix well.
  23. Assembling:
  24. In a spring foam tin place first layer of vanilla almond milk cake
  25. Spread a thin layer of whipped cream over the sponge.
  26. Place second layer of kheer on the top of it.
  27. Garnish with crushed almonds.
  28. Place second layer of sponge over it.
  29. Place jelly layer over the sponge.
  30. Apply whipped cream on the sides of cake.
  31. Cover entire cake with whipped cream and refrigerate for 15 minutes.
  32. Garnish with crushed almonds and server chilled.
