ABOUT Milky Ridge Gourd Curry RECIPE

This is a traditional curry from Andhra Pradesh. In this curry we use ridge gourd, milk, roasted sesame seed powder, but I gave a twist and I used peanut butter instead of sesame seed powder. It tastes yummy.

Ingredients Serving: 3

  1. Tender ridge gourd 500 grams
  2. Chopped onion 1 medium
  3. Boiled hot milk 1 cup
  4. Peanut butter 2 tablespoon
  5. Green chillies 2-3
  6. Red chilli powder 1 teaspoon
  7. Curry leaves 5
  8. Cumin seeds 1/2 teaspoon
  9. Salt to taste
  10. Oil 2 tablespoon

Instructions

  1. Wash and peel ridge and chop the gourd to cubes. Keep it aside.
  2. Heat oil in a pan, add cumin seeds, allow to splutter.
  3. Now add chopped onions, green chillies, curry leaves and saute it for 5 minutes or till the onions become translucent.
  4. Add the ridge gourd pieces, turmeric powder, red chilli powder and saute it for 2 -3 minutes.
  5. Now cover it with lid and cook it till the ridge gourd becomes soft.
  6. Once we close the curry with lid, it releases lot of water and that is enough to become soft. No need to add water.
  7. By this time add peanut butter, mix it well and cook for 2 minutes.
  8. Now pour the milk and gently mix and remove from flame.
  9. Don't continue to cook for more than 1 minue, otherwise the milk can begin to curdle.
