ABOUT Rasabali RECIPE

Rasabali is a famous dessert of a place called Kendrapara in Orissa. It is served as prasad to Lord Baldavjew in Baldavjew temple in Kendrapara. It is also one of the items of chappan bhog served to Lord Jagannath of Puri. A very famous and delicious dessert it consists of deep fried flattened balls of chenna(farmer cheese) soaked in cardamom flavored thickened milk.

Ingredients Serving: 4

  1. Milk 2 litres full fat cow milk
  2. Sugar 1 cup
  3. Lemon juice 2 tablespoon
  4. Fine semolina 1 teaspoon
  5. All purpose flour 1 teaspoon
  6. Baking soda 1/4 teaspoon
  7. Cardamom powder 1 teaspoon
  8. Saffron 5- 6 strands (optional)
  9. Oil for deep frying

Instructions

  1. Take 1 litre milk in a saucepan and let it come to boil
  2. Then add lemon juice and keep on stirring. You will see the milk curdling.
  3. Now take a muslin cloth and strain the curdled milk.
  4. Rinse the collected bundle of chenna(farmer cheese) under running water. Now chenna(farmer cheese) is ready.
  5. In a mixing bowl take the chenna. Add all purpose flour, semolina, baking powder and 1 tablespoon of powdered sugar to it and knead softly to get a smooth dough.
  6. Make small balls out of the dough and press with your palm to get a flattened patties like shape.
  7. Take the rest one litre milk in a saucepan and let it come to boil. Add the saffron strands and cardamom powder. When the milk reduces to half, add sugar and let it simmer on low flame.
  8. Heat oil in a pan and fry these patties till brown. Once done immediately drop theses patties in the hot milk. Repeat the process for all the patties.
  9. When all the patties are added to milk remove the milk pan from gas and let it cool down for some time to allow the patties to soak in the milk.
  10. Serve warm or chilled as you like.
