ABOUT Bhapa Sondesh or Steamed Sandesh RECIPE

It is a Bengali sweet made with chhena or cottage cheese.

Ingredients Serving: 6

  1. 1 litre full cream milk
  2. 2-3 tablespoon sugar
  3. 2 green cardamom
  4. 1/2 teaspoon rose essence
  5. lemon juice or vinegar 1 tablespoon

Instructions

  1. First boil the milk.
  2. As the milk comes to full boil add lemon juice or vinegar.
  3. Soon you will see the milk will curdle.
  4. Discard the water and take out the cottage cheese in a cheese cloth or any fine cotton cloth.
  5. Wash the cottage cheese several times so that the smell of the vinegar or lemon juice goes away.
  6. Then tie it to the kitchen tap for 30 minutes so that the excess water comes out.
  7. But remember the paneer should not be too dry otherwise the sondesh will become dry.
  8. Now take out the paneer and mash it with your palm.
  9. Continue doing this till you see oil in your palm.
  10. Add sugar and mix till the granules get dissolved.
  11. At this phase add some cardamom powder and rose essence.
  12. Finally mix it again.
  13. Then in a tight steel tiffin box put this mixture.
  14. Garnish with some saffron at the top.
  15. Steam it for 15 minutes in a pressure cooker without whistle.
  16. Alternatively you can grease a micro proof dish and micro in high power for 6-8 minutes.
  17. As it cools down make equal pieces and keep it in the refrigerator for some time.
  18. Serve chilled.
