Ingredients Serving: 6

  1. To marinate:
  2. 500 grams cleaned prawns
  3. salt as required for marination
  4. 1/2 tsp red chilli powder, 1/2 tsp dhania powder, 1/2 tspgaram masala
  5. pinch of turmeric
  6. 1 lemon juice
  7. 1 green chilli finely chopped
  8. To Grind:
  9. 1/4 cup grated dry coconut/ kopra
  10. 7 - 8 byadagi red chilli
  11. 1 teaspoon pepper corns
  12. 1/2 tsp jeera & 1/2 teaspoon fennel seeds
  13. 1 teaspoon dhania seeds
  14. little tamarind
  15. 1 medium onion diced
  16. For Tempering:
  17. 200 ml ghee
  18. 2 tbsp finely chopped garlic & 2 tbsp finely chopped ginger
  19. 12 - 15 cashews
  20. 1 medium onion finely chopped
  21. 4 strands curry leaves
  22. salt
  23. 1/4 dry coconut finely grated

Instructions

  1. In a bowl add in cleaned prawns add turmeric and salt in water.
  2. Marination - to the prawns add lemon juice, salt, red chilli powder, dhania powder, garam masala, turmeric, finely chopped green chilli. Marinate it for 15 minutes.
  3. Dry roast separately - dry coconut, dhanya seeds, fennel seeds, byadagi red chilli, pepper, jeera and onion. Cool it completely.
  4. Add tamarind to the above roasted ingredients and grind it to a fine paste.
  5. In a pan, add ghee. Heat it on a medium flame. Once it is hot, add garlic and saute till nice aroma comes out. Add in ginger and saute.
  6. Once ginger garlic are done, add cashews, fry it. Add onion and fry till translucent.
  7. Add in the marinated prawns and saute. The prawns will start to cook in the ghee. Fry for 5 minutes in ghee. Prawns cooking in ghee has its own flavor.
  8. Now add the grounded paste with very little water. Cook the same.
  9. Boil until the prawns are cooked and the masala is cooked completely. The ghee starts to float. Thats the indication the masala is cooked. As per your taste dry the prawns. If you want semi gravy you can stop at this stage. Recipe becomes Prawn Ghee Roast Gravy. Once prawns are cooked, before turning off the stove, add in finely grated dry coconut. Mix well and Serve hot.
