Ingredients Serving: 8

  1. 1 cup Basmati rice
  2. Milk -2 litres
  3. Sugar - 1- 1/4 cup or depending on taste
  4. Cardamom powder -1/4 teaspoon
  5. Vanilla Essence -2 drops
  6. Almonds, Pistachios, raisins, cashews (Blanched & Chopped) - 1/4 cup
  7. Condensed Milk – 1 tin (100ml)
  8. A few strands of Saffron soaked in milk
  9. Edible Silver Leaf

Instructions

  1. Wash and Soak the rice in water as instructed on the packet of the basmati rice.
  2. Dry the rice on a muslin cloth in shade and grind it into a coarse powder and keep it aside.
  3. Simultaneously boil the milk and keep stirring till its reduced a little and then add the coarse rice powder and keep stirring it continuously and see to it that no lumps are formed and cook till the rice is completely cooked.
  4. Just before switching of the flame add the saffron soaked in milk, cardamom powder and vanilla essence and mix well and switch of the flame.
  5. Then pour the phirni into earthen pots and garnish with Almonds, pistachios, raisins, cashews and edible silver leaf.
  6. Refrigerate and enjoy the phirni after few hours.
