ABOUT Malpua with Rabri RECIPE

Malpua with rabri this delectable delicacy is served as a dessert and normally we north indians make this sweet in the month of sawan and especially on nag panchmi and this time i have made these with little twist ,have given healthier touch by making in appam pan yes have made with few drops of oil in appam pan with good taste .

Ingredients Serving: 6

  1. For Rabri:
  2. 2 glass full fat milk
  3. 1/4 bowl sugar
  4. 1/2 bowl condensed milk
  5. 1 teaspoon cardamom powder
  6. 8 to 10 slivered almonds
  7. 3 to 4 basil leaves
  8. For Puas:
  9. 1/2 bowl all purpose flour
  10. 1/2 bowl wheat flour
  11. 1/2 bowl semolina
  12. 1/2 bowl malai
  13. 1/2 bowl sugar
  14. 1 tablespoon mixed powder of cardamom cloves and cinnamon
  15. 1/2 teaspoon baking soda
  16. 1 bowl milk
  17. 2 tablespoon oil or ghee

Instructions

  1. In a big bowl add all the flours along with sugar and mixed powder of cinnamon cloves and cardamom except baking soda.
  2. Gradually add milk to it to make a lump free batter.
  3. Keep the batter aside for 30 minutes.
  4. Meanwhile prepare rabri.
  5. For rabri, take a big heavy bottomed pan, add milk to boil till it is reduced to half and simmer.
  6. Add sugar with cardamom powder and stir continuously.
  7. Add condensed milk and let it cook till mixed completely.
  8. Off the flame and let it cool.
  9. Now grease the appam pan let it heat.
  10. Add baking soda to the pua batter and give a quick stir.
  11. Pour one table spoon batter in each cavity of the pan.
  12. Cook with a lid for approximately 3 minutes and sprinkle few drops of oil over puas.
  13. Now one by one flip all the pieces, see the nice golden roasted colour, keep the flame low.
  14. After 3 minutes again flip them all.
  15. Take them out in an absorbent paper.
  16. Garnish rabri with slivered almonds and basil leaves.
  17. Serve hot puas with coolcool rabri.
