ABOUT Indori Dryfruit Shikanji RECIPE

This is one of my favourite dishes from Indore.Contrary to the lemon shikanji this is a rich drink made with milk, curd and dry fruits. Very cooling recipe which can be had during fasts also.

Ingredients Serving: 2

  1. Milk-500 millilitre
  2. Curd-200 grams
  3. Sugar-3 tablespoon
  4. Mix dry fruits-1 tablespoon
  5. Cardamom powder-1/4 teaspoon
  6. Pista and almond slivers for garnishing

Instructions

  1. Take milk in a thick bottomed vessel and keep to boil.
  2. Take curd and put in a cotton cloth to drain the water.
  3. Hang for an hour.
  4. After milk starts boiling add few strands of kesar and keep the gas slow.
  5. Keep stirring and scraping the sides while boiling the milk. Boil till milk reduces to half and becomes thick. Add sugar and boil for 10 minutes.
  6. Now our thick milk and hung curd is ready.
  7. Keep in fridge for 4 to 5 hours.
  8. Put milk in a mixer jar.
  9. Then add hung curd.
  10. Blend properly till it mixes well.
  11. Add chopped dry fruits like cashews, almonds, pista and raisins.
  12. Pour in serving glasses and garnish with almond and pista slivers.
  13. Serve chilled.
