ABOUT AKKARAVADISAL (IYENGAR SPECIAL) RECIPE

This "akkaravadisal" is a milk-based speciality of Iyengar Cuisine prepared on the koodaravalli day (27th day of margazhi) and offered to the Lord. Enjoy the iyengar famous akkara adisil (akkaravadisal)

Ingredients Serving: 4

  1. Ingredients:
  2. Milk - 1 litre
  3. Raw Rice - 1/4 cup
  4. Moong dhal(yellow split) - 1 tablespoon
  5. Jaggery crushed - 1/2 cup
  6. Saffron - 1 pinch
  7. Cashews - 12
  8. Kismis(dry grapes) - 15
  9. Pachaikarpooram(edible camphor) - a pinch
  10. Cardamom - 2
  11. Ghee -6 tablespoons

Instructions

  1. Wash rice and dhal. Drain the water completely.
  2. Heat a deep and heavy bottomed vessel (preferable pressure cooker) and roast the rice dal mixture till it changes colour and slightly yellow.
  3. Now add 1/2 litre of milk and allow it to cook in the milk or pressure cook for 4 whistles.
  4. When done, mash the rice well.
  5. Soak saffron in a tablespoon of hot milk.
  6. Crush jaggery, dissolve in very little water, strain out the dust and add it to the mashed rice.
  7. Now add 1/2 of the ghee and the remaining milk mix well and stir for a while on stove.
  8. The consistency should be semi-solid.
  9. Add powdered cardamom, saffron and pachaikarpooram.
  10. Add in the remaining ghee.
  11. Garnish with fried cashews and kismish.
