Ingredients Serving: 4

  1. 2 1/4C All purpose flour
  2. 1 1/2C Butter (room temp.)
  3. 1 1/4C Powdered sugar
  4. 5 Eggs room temp
  5. 1 1/2 tsp Baking powder
  6. 1/4 tsp Baking soda
  7. A pinch of salt
  8. 1/2 to 1C Caramel syrup
  9. 1/2 tsp Vanilla essence
  10. 1/2tsp Cardamom powder
  11. 1/2tsp Cinnamon powder
  12. 2 Cloves
  13. 1/4tsp Nutmeg powder
  14. 2 to 3C Dry fruits and nuts
  15. cashews black currants raisins cherries etc
  16. 2C Fresh orange juice for soaking the fruits and nuts
  17. Icing sugar for dusting

Instructions

  1. Sieve the dry ingredients(flour,baking powder,baking soda and salt) and keep aside. Separate egg yolks and whites.Powder the sugar along with the spices.
  2. Caramelize 1/2 to 3/4 c sugar till dark brown be careful not to burn the sugar.Add 1/2 C hot water to this caramelized sugar.This should be done very slowly otherwise the hot bubbles may burn your hand.Keep this aside.
  3. Now beat the egg whites till stiff peaks appears. Now beat the egg yolks and sugar in another bowl till very creamy. Add softened butter to this and beat well.Add the caramelized sugar syrup to this egg and butter mixture.
  4. Toss the soaked fruits and nuts to the flour mixture. Fold in this flour and nuts mixture to the butter mixture very slowly. After the flour is mixed well fold in the egg whites slowly to this.
  5. Pre heat the oven at 200 degree C for 10 to 15 mins. Grease the cake tins and line it with butter paper. Pour the batter to the prepared tins. Bake at 180 degree for 45 mins to 1 hr or till the tester comes out clean.
  6. It took almost 1hr for me.Cool the cakes in tin for 20 mins and then remove from the tins.Allow the cakes to cool completely sprinkle the icing sugar on the cakes. Slice and serve.

What is I don't find fresh orange?? And is there any supplement for caramel syrup?

Hi, would definitely like try this. What is or where do I get the caramel syrup? Can I make it at home? Can you please share the process?
