ABOUT Zafrani Pulao / Saffron Rice RECIPE

Ingredients Serving: 2

  1. Basmati rice 1 cup
  2. Water 1 and 1/4 cup
  3. Milk 3/4 cup, divded
  4. Ghee 2 tablespoon
  5. Shahijeera 1/2 teaspoon
  6. Dalchini piece 1/2 inch
  7. Cloves 3-4
  8. Bay leaf 1
  9. Green cardamom 2
  10. Star anise 1
  11. Broken cashews 10-12
  12. Raisins 15-20
  13. Silvered Almonds fistful
  14. Nutmeg powder 1/4 teaspoon
  15. Medium sized onions 2 , finely sliced
  16. Saffron threads 1/4 teaspoon
  17. Salt to taste
  18. Sugar to taste [I used 2 teaspoon], optional
  19. Finely chopped coriander leaves for garnish, optional

Instructions

  1. Wash rice clean and soak in just enough water for 30 minutes.
  2. Drain the water after 30 minutes.
  3. Soak saffron threads in 4 tablespoons hot milk.
  4. Heat ghee in a deep pan.
  5. Add raisins, broken cashews and fry it gently. Keep it aside
  6. Add half quantity of finely sliced onion and saute it until golden brown. Keep it aside. (We will use it for garnishing)
  7. Add shahi jeera and let it splutter. Add cinnamon stick, cloves, green cardamom, bay leaf, star anise and saute gently.
  8. Add remaining finely sliced onions and saute it until it turns translucent.
  9. Now add soaked and drained rice and saute it for a minute. Add nutmeg powder, salt to taste and sugar. Mix it well
  10. Add 1 and 1/4 cup of lukewarm water and cook it covered until rice is half done
  11. Once half done, add in milk, cover the pan and cook on low heat for 5 minutes.
  12. Now add the soaked saffron, some roasted dry fruits and silvered almonds.
  13. Mix it well. Cover and continue to cook for 2-3 minutes more.
  14. Switch off the flame and allow the rice to cook in its own steam for 10 minutes.
  15. After 10 minutes, fluff up the rice gently with a fork.
  16. Garnish it with roasted dry fruits, fried onions, and chopped coriander leaves.
  17. Serve it along with an accompaniment of your choice
