Ingredients Serving: 1

  1. Rice - 200 grams or 1 cup (as per US ratio). (Rinsed twice and soaked for 20 minutes).
  2. Vegetable broth - 800 millilitre to 1 litre.
  3. Spring onions - 1 cup chopped
  4. Sweet corn - 12 cup shelled.
  5. Button mushrooms - 10 to12 sliced.
  6. Celery - 1/4 cup chopped
  7. Potatoes - 1/2 cup diced.
  8. Carrots - 1/2 cup diced
  9. Garlic - 5 - 6 nos chopped
  10. Tobasco - 2 teaspoon
  11. Chilly sauce - 1 tablespoon
  12. Tomato sauce - 2 tablespoon
  13. Dried oregano - 1 teaspoon
  14. Dried basil - 1 teaspoon
  15. Bay leaf - 2 medium
  16. Pepper powder - 1 teaspoon
  17. Salt to taste
  18. Olive oil - 1 tablespoon

Instructions

  1. In a heavy bottomed pot, heat olive oil, add the garlic and saute till brown.
  2. Add the chopped onions and corn, potatoes and carrots.
  3. Add the celery, mushrooms and continue to saute. Add the Basmati Rice and vegetable stock.
  4. Add the tomato sauce, chilly sauce and tobasco, bay leaf, dried oregano and basil.
  5. Season with salt and pepper.
  6. Once the liquids come to a boil reduce the heat and continue to cook on slow heat till the Basmati Rice is cooked.
  7. Garnish with coriander and serve hot.
