ABOUT Mango Ice-Cream RECIPE

This mango ice cream is a super delicious delight for mango lovers. It requires common ingredients present in our kitchen. This rich and creamy ice cream in itself is very lip-smacking but that too topped with faluda makes it yummier. Now let’s directly go to the recipe.

Ingredients Serving: 5

  1. Full fat milk – 4 cups
  2. Full fat milk – ¼ cup (warm)
  3. Cornflour – 1 tablespoon
  4. Sugar – 7-8 tablespoon
  5. Ripped mangoes – 2 chopped
  6. Cardamom powder – ½ teaspoon
  7. Chopped nuts – ½ cup (almonds, pistachios, and cashew nuts)
  8. Saffron strands- 7-8
  9. For making Faluda
  10. Glass noodles – 1 cup
  11. Sugar – 2-3 teaspoon
  12. Cardamom powder – ½ teaspoon
  13. Food color powder– orange and yellow

Instructions

  1. Combine the warm milk and saffron in a bowl and keep aside.
  2. Take another bowl, mix the cornflour and water. Keep aside.
  3. Take a non stick deep pan, add milk, cardamom powder, chopped nuts and sugar, and cook on a medium heat till it is reduced to half.
  4. Add the cornflour mixture little by little and stir continuously while scrapping the sides of the pan from time to time to get the (cream) into the milk.
  5. Switch off the gas and allow the mixture to cool completely.
  6. Once cooled, add saffron milk mixture and give a quick stir.
  7. Take the kulfi moulds, add 4-5 chopped mangoes, now pour the milk mixture and again add the chopped mangoes on the top.
  8. Garnish with saffron strands and freeze overnight.
  9. For faluda:
  10. Take a non stick pan; add water, cardamom powder and pinch of orange color and cook on a medium heat for 5-7 minutes.
  11. Now add the glass noodles, stir gently and keep aside for 15 minutes.
  12. Orange color Faluda is ready to serve with kulfi.
  13. Plating: Unmould the kulfi on the serving plate, add the faluda and enjoy…
