ABOUT Vegetables and Chickpeas Cheesy balls RECIPE

Cheesy , crispy healthy snacks for kids . Kids will definitely like these salty, cheesy, sweet and Litle bit spicy balls. I have used grated vegetables , chickpeas , semolina and mozzarela cheese for making this which are great for kids. Once you make these , they will ask you to make it again and again . Instead of deep frying i have used shallow frying method.

Ingredients Serving: 4

  1. Grated vegetables 1 cup, (Carrot , capsicum , cabbage , beetroot)
  2. Boiled Potato 1
  3. Boiled chickpeas 2 tbsp mash them slightly
  4. Onion 1 small, chopped
  5. Ginger crushed 1/2 tsp
  6. Semolina 2 -3 tbsp
  7. Mozzarella cheese 2 -3 tbsp
  8. To make paste :
  9. Flour 3 tbsp
  10. Milk 3 tbsp approximately
  11. Salt a pinch
  12. Dry powdered spices :
  13. Chilli powder 1/3 tsp
  14. Dry mango powder 1 1/2 tsp
  15. Cumin Powder 1/2 Tsp
  16. Coriander powder 1/3 tsp
  17. Black pepper powder 1/4 tsp
  18. Garam masala a pinch
  19. Salt to taste

Instructions

  1. Wash and grate all the vegetables
  2. Boil potato
  3. Heat oil in a nonstick pan in medium heat
  4. Now add chopped onion , crushed ginger
  5. Saute until translucent
  6. Add salt, turmeric powder , cumin powder , coriander powder and chill powder
  7. Add dry mango powder , black pepper powder and Garam masala
  8. Saute again for 30 seconds
  9. Add grated vegetables , cook for 3-4 minutes in low heat with a cover on
  10. Now add lightly mashed potato and chickpeas
  11. Saute the mixture for 2-3 mins in low heat
  12. Now add roasted semolina
  13. Mix well, saute for 3-4 mins
  14. Now keep aside in a bowl
  15. Mixture is ready
  16. Make bread crumbs ready
  17. Mix milk, flour, salt
  18. Now grease your palms, make small sized balls, flatten them
  19. Put mozzarella cheese inside, cover with another dics
  20. Like this, now make balls again
  21. Balls should be crack free, cheese should be covered properly, otherwise they may break while frying
  22. Balls are ready now
  23. Now dip them in the flour paste
  24. Like this
  25. Roll them over biscuits or bread crumbs
  26. Coating finished now
  27. Heat oil in a small round Kadai
  28. When bubbles come, shallow fry the veg balls , both sides until red
  29. Keep aside in plate lined with kitchen tissues
  30. Serve hot with sweet tamarind chutney or tomato ketchup paired with a cup of hot chocolate or hot milk
