a spicy, tangy pickle which is a favourite of many.

Karele ka achar (Bitter gourd pickle)

Ingredients to make Karele ka achar (Bitter gourd pickle)

  • Bitter gourd(karela)- 1/2 kg
  • mustard Oil- 1/2 cup
  • salt- as required
  • red chilli powder- 1 tsp
  • fennel seeds(saunf)- 1 tsp crushed
  • onion seeds(kalonji)- 1 tsp crushed
  • fenugreek seeds(methidana)- 1 tsp crushed
  • Ajwain- 1 tsp
  • mustard seeds- 1 tsp
  • turmeric powder- 1/2 tsp
  • Kashmiri chilli powder- 1 tsp

How to make Karele ka achar (Bitter gourd pickle)

  1. Wash and roughly peel the karelas, let dry thoroughly.
  2. Now slice into rounds and apply salt on it, let sit for a day.
  3. Next day add the karela along with kashmiri chilli, turmeric, mustard seeds, ajwain, fenugreek, onion seeds, turmeric, fennel seeds and red chilli powder in a large glass bottle. Shake vigorously and keep in the sun for 2 days.
  4. After two days, heat mustard oil to smoking point and then let cool. Add oil to the pickle bottle and shake well to coat.
  5. Keep in the sun for a couple of days. Pickle is ready!
