Wash and roughly peel the karelas, let dry thoroughly.
Now slice into rounds and apply salt on it, let sit for a day.
Next day add the karela along with kashmiri chilli, turmeric, mustard seeds, ajwain, fenugreek, onion seeds, turmeric, fennel seeds and red chilli powder in a large glass bottle. Shake vigorously and keep in the sun for 2 days.
After two days, heat mustard oil to smoking point and then let cool. Add oil to the pickle bottle and shake well to coat.
Keep in the sun for a couple of days. Pickle is ready!
