When it comes to Arbi we often fry to crisp or make simple gravy with tomato,here I have tried arbi similar to dum aloo way...let's see the recipe and do let me know ur comment

Ingredients Serving: 3

  1. Arbi:- 500 gms
  2. onion:- 1 big finely chopped
  3. green chillies:- 3 slit long
  4. ginger grated:- 1 tbsp
  5. Cummin Seeds:- 1 tsp
  6. fennel seeds:- 1/2 tsp
  7. Black cardamom( badi ilaichi): 1 no( crushed nicely)
  8. mustard seeds:- 1 tsp
  9. coriander powder:- 3 tsp
  10. Red chilly powder:- 1 tsp
  11. Kashmiri chilly powder:- 2 tsp (this add color to your gravy)
  12. turmeric:- 1/2 tsp
  13. Kasuri methi:- 1 tbsp
  14. curd:- 1/2 cup ( it shouldn't be sour)
  15. tomato:- 1 chopped (Make a paste)
  16. coriander leaves for garnishing
  17. oil to fry and cook
  18. salt as per your taste
  19. water:- 1 cup
  20. sugar -optional


  1. Boil arbi until it becomes soft, remove from water and allow it to cool
  2. Peel the skin and set aside.
  3. Heat oil in a pan and fry arbi until it turns crispy. Add pinch of salt, chilly powder and turmeric to oil while frying arbi
  4. Heat another pan, add mustard seeds, cumin seeds, fennel seeds and black cardamom. fry for 2 mins
  5. Add chopped onion, grated ginger and green chilly fry until it turns little brown in color.
  6. Add turmeric powder, coriander powder and chilly powder fry well add kasuri methi and tomato paste
  7. Mix well until all masala incorporate nicely. Add curd and mix nicely
  8. Add water and salt and allow it to boil for 3-4 mins
  9. Add arbi in to the gravy, cover with lid and cook it for 4-5 mins in slow flame
  10. Add coriander leaves and switch off the flame
  11. Serve hot with rice or chapati
