Ingredients to make Clove Caramel Cake

  • For the Cake: 1 1/2 cup all purpose flour
  • 1 cup powdered sugar
  • 2 eggs
  • 1 tsp baking powder
  • 1/2 cup oil
  • 1 - 2 tsp vanilla essence
  • For the caramel:
  • 2 cups sugar
  • 1 cup milk
  • 4 cloves ground fine
  • 1 tsp salt
  • For decorating: 1 cup whipped cream
  • 1/2 cup cream cheese
  • 2 tbsp milk
  • Chocolate sauce

How to make Clove Caramel Cake

  1. Sift the flour and baking powder together. Cream together sugar and oil till creamy, add in the eggs one by one.
  2. Gradually fold in the flour and the oil-sugar-egg mixture to get a smooth batter. Add vanilla essence.
  3. Line a baking tin, pre heat the oven at 150°C and bake for 40 to 45 minutes until a skewer inserted comes out clean.
  4. For the Caramel Syrup: In a pressure cooker add the 2 cups of sugar and keep the flame on low. Let it melt, add the milk (make sure the milk is also warm).
  5. I was trying to make the caramel sauce but when added the milk, it curdled. So I strained the syrup and got nice golden brown caramel syrup, add salt.
  6. Divide this syrup in 2 equal parts. When the cake is done, slice from the middle and pour one part of the syrup on it.
  7. I have used some cream, you can put some vanilla ice cream here too. Place back the cake on top. Add the ground clove in the second part of the caramel syrup and heat it a little.
  8. Pour it on top, save 3 - 4 tbsp and mix it with cream cheese. Add the 2 tbsp milk to get a smooth spreading mixture. Spread it on the cake.
  9. Spread a layer of whipped cream over it and sprinkle chocolate sauce all over.
  10. Refrigerate for some time and enjoy!

My Tip:

You can make caramel sauce and use it in the similar way as the caramel syrup. But its works well if you go wrong with the caramel sauce!
