Ingredients Serving: 8

  1. 4 eggs
  2. 550 ml milk
  3. 115 gm breadcrumbs
  4. 85gm + 140 gms caster sugar
  5. 4 tbsp jam of your choice
  6. A handful of chopped nuts
  7. Some raisins and dried berries

Instructions

  1. Pre heat oven at 150 degrees Celsius.
  2. Separate three eggs, keep the whites in a clean bowl, free of any grease.
  3. In another bowl, put the yolks and one whole egg. Beat till light and fluffy.
  4. Add the crumbs, 85 gms sugar and milk and mix till everything combines.
  5. In a borosil serving bowl or any oven safe serving bowl, spread the jam evenly, follow with nuts and berries, then the milk breadcrumbs mixture.
  6. Bake for 50 to 55 minutes or till set.
  7. While the pudding is in the oven, beat the egg whites till peaks form, then start adding the remaining sugar in small batches till peaks form, the peak won't be very stiff. This is called Royal Icing.
  8. An hour before serving, decorate with the royal icing and bake for 15 to 20 minutes till you get a little color.
  9. Top with sprinklers if you want. Serve warm.
